Turkish Sultana grapes are seedless grapes. Their rich flavor intensifies when dried. To both shorten drying time and preserve their light color, they are soaked in a solution of olive oil and potassium carbonate before drying. This method cracks the outer skin of the grape, shortening the drying process. Grapes dried using this method are called Sultana grapes. Sultana grapes are categorized into five types based on their color: 7, 8, 9, 10, and 11, with 7 being the darkest and 11 being the lightest. They are also categorized into six sizes: jumbo, standard, medium, small, and extra small.

Turkish Thomson grapes, with their flavor and aroma similar to California grapes, are attracting high demand in the global market thanks to their competitive prices. Raisins and Thompson variety is same with Sultanas. However, unlike Sultanas, they are not soaked in olive oil and potassium carbonate solutions. This is the main difference between raisins, Thomsons, and Sultanas. Therefore, the drying period can be up to three weeks. This allows the raisins to achieve a darker color and more intense flavor.
