Turkish pine honey is a type of honeydew honey. It’s sweet and spicy, with a resinous scent and a deep amber color. Pine honey is a rare type of honey produced by bees using the secretions of an insect called Marchalina hellinica, which lives on the trunks of certain pine tree species. Ninety-two percent of the world’s pine honey is harvested in Turkey’s Mediterranean region. Muğla province accounts for 86% of Turkey’s pine honey production.
