The demand for pasta in the world is increasing year by year. According to the data of the International Pasta Organization (IPO), a total of 17.3 million tons of pasta was produced worldwide in 2021. The fact that pasta is an easy-to-cook and low-cost food is thought to be effective in this high demand. In addition, the high nutritional value of durum wheat and the fact that pasta can be prepared with various sauces to suit the taste of almost every culture are shown as the main reasons for the increase in consumption.
